Yields: 2-3 cups
Ingredients:
1 Medium Yellow Onion diced
4 Cloves Garlic
4 Cup of Tomato Sauce
1 full Cup of Brown Sugar
1/2 Cup of Soy Sauce
1 Can of Coca Cola (only need to use 1/4 of the can, 3 oz.)
1/2 Cup of Rice Wine Vinegar
1 tsp of Red Chilli Flakes
1/2 tsp Asian Five Spice
1/2 tsp Ground Pepper
Pinch of Black Sesame Seed
Few Green Onions
Directions:
1. Start off with roughly chopping up 1 medium sized onion.
(There is no need to spend too much time cutting the onion as it will be blended in the end.) Next, roughly chop up 4 cloves of garlic and add both the garlic and onion to a screaming hot pan. Saute them both till you have some color on them.
2. Now grab your favorite cola and deglaze the pan using about 1/4 of the cola in the can. Let sauce reduce for a few minutes. Add in 4 cups of Tomato Sauce.
(You can add as more or less tomato sauce depending on your taste. So experiment!) Add in 1 full cup of brown sugar. Add in 1/2 cup of soy sauce. Add in 1/2 cup of rice wine vinegar. Add in 1 tsp of chili flakes. Add in 1/2 tsp of ground pepper. Add in 1/2 tsp of Chinese 5 Spice.
3. Now cook the sauce for about an hour until the sauce is thick and sticky which is referred to as "nape" in French. Once the sauce is thick and sticky, pour it out of the pan and into a sauce container that can accomodate a handheld stick blender.(Doc uses a professional grade sauce container in this video.) Blend the sauce so that it is smooth and the onions and garlic have been blended fully into the sauce. Place the sauce in a bowl and add a pinch of black sesame seed on top. Finish with chopping up a few green onions and placing them on top of the black sesame seed and BBQ sauce.
Enjoy alongside your favorite grilled meat for dipping or use to baste while grilling.
