Ratatouille: Meatless Monday Earth Day Recipe

Squash, zucchinis, bell peppers, eggplants, and tomato sauce come together in this French classic Ratatouille for a veggie packed dish. Try this recipe out for your next veggie dish.

Cooking Recipe

Servings: 8
Cook Time: 30-45 minutes
Prep Time: 10 minutes

Ingredients:
1 Red Bell Pepper
2 Zucchinis
2 Yellow Crooked Neck Squash
1 Chinese eggplant
1/4 cup parmesan cheese
2 cups tomato sauce
handful of oregano and thyme

Directions:
1. Preheat oven to 375 degrees.

2. In an oval baking dish, pour 2 cups of your favorite tomato sauce into the baking dish.
Sprinkle the handfuls of herbs and half of the parmesan cheese into the tomato sauce.
Using a mandolin, thinly slice the vegetables and arrange in a spiral design.

3. Once the oven is preheated, bake for 30-45 minutes until tomato sauce is bubbling. 30 minutes if you like the vegetables firm, 45 minutes if you like it cooked through.

4. Remove from oven and serve hot. This can be enjoyed as a side dish or main dish.
