This recipe is a creative and delicious way to enjoy a vegan version of the Mexican taco. Using ground walnuts mixed with coriander and cumin for the “meat,” this fresh healthy taco will excite your taste buds. Colorful and nutritious ingredients will bring the sun’s energy into your home. Raw Living Expert, Leah Putnam, shares this quick and easy recipe in this Grokker Premium Video.

Cooking Recipe

Ingredients:
Filling:
1 & 1/2 cups raw walnuts, ground in a food processor or high speed blender
1 & 1/2 tsp ground cumin
3/4 tsp ground coriander
2 tbsp Nama Shoyu

Shell:
4 red cabbage leaves or 4 Romaine whole lettuce leaves

Toppings:
1 cup shredded romaine lettuce
Fresh Tomato Salsa
1 cup sunflower sprouts
Chopped avocado
Fresh lime (optional)

Directions:
1. In a bowl, add in your ground walnuts (you can use a food processor or high speed blender to grind), cumin and coriander and mix well. Add the Nama Shoyu and mix well.

2. Place a red cabbage or romaine lettuce leaf on a plate and add your walnut filling. Top with shredded lettuce, fresh tomato salsa, spouts, and chopped avocado. Squeeze fresh lime over the top (optional) before serving.
