1 eggs
1 cup all-purpose flour
3/4 cup and 2 tablespoons milk
1/4 cup vegetable oil
1-1/2 teaspoons white sugar
2 teaspoons baking powder
1/8 teaspoon salt
1/4 teaspoon vanilla extract
beat eggs until fluffy. next, beat in flour, milk, vegetable oil,
sugar, baking powder, salt and vanilla, just until smooth. set aside
Tomatillo Avocado Salsa
(adapted from epicurious)
2 cups of tomatillos
2 large avocados (about 1 1/3 pounds total), halved, pitted, peeled,
finely chopped (about 2 cups)
3/4 cup finely chopped white onion
1/2 cup chopped fresh cilantro
3 tsp fresh lime juice
1 serrano chiles, seeded, minced
Clean and husk the tomatillo and give it a rough chop.
Add tomatillo and serrano pepper to the food processor and pulse until
it chops. Add in white onion and cilantro until smooth.
Transfer to bowl and squeeze in lime juice and mash avocado.
Pour waffle mix onto hot waffle iron. Cook until golden brown.
Top waffle with tomatillo avocado salsa, sharp cheddar cheese,
jalapeno, and bacon.
