Dried Fruit Compote with Fresh Goat Cheese

This elegant and simple dish is sweet and full of flavor. This French classic is a delicious after-dinner treat that pairs well with cheese, bread and your favorite wine. Check out all of Chef Pilar Sanchez's Grokker Premium videos in her collection called “Taste of Napa”.

Cooking Recipe

Servings: 6
Cook Time: 30 Minutes
Prep Time: 10 Minutes
Ready In: 40 Minutes

Ingredients:
1 cup dried cranberries
1 cup pitted prunes
1 cup dried apple rings
1 cup dried apricots
1 cup dried figs
½ cup dried cherries
3 cups Sauvignon Blanc
1 cup sugar
1 vanilla bean
1 log of fresh goat cheese

Directions:
1. Prepare the vanilla bean by slicing it in half and then cutting each half lengthwise. Pour the wine into a large saucepan and add the prepared vanilla bean and sugar, and stir.

2. Add dried cranberries, prunes, apricots, figs (with the stem removed), cherries, and apple rings to the wine mixture and simmer for about 20 minutes. Start at medium to high heat, let the wine come up to a boil then reduce the heat. Let the wine reduce until it becomes a thick syrup. Once it has thickened pour the compote in a bowl allow the fruit compote to cool completely.

3. Place sliced bread and cheese of your choice on a plate, spoon the chilled compote onto the plate and drizzle some of the thick sauce on top of the compote and cheese.
