Makes: 6-8 waffles
Ingredients for Gluten-Free Waffles with Salted Maple and Bacon:
1 cup Alex's whole grain gluten-free flour, (recipe below)
1 tbsp ground flax seeds
1 tsp ground cinnamon
1 & 1/2 tsp baking powder
Pinch of salt
1 & 1/4 cup buttermilk
2 ounces butter, melted
2 eggs
3 tbsp maple syrup
1 tsp extra virgin olive oil
3 slices bacon
3/4 cup maple syrup
1 tsp sea salt
Cooking spray
Directions:
1.In a large bowl mix together the flour, flax seeds, cinnamon baking powder, and salt. In a separate bowl, whisk together the buttermilk, butter, eggs and maple syrup. Add the wet ingredients to the dry ingredients and mix to combine.
2.Have a waffle iron preheated and greased. Ladle batter into waffle iron and cook 6-8 minutes until waffles are golden brown.
3.In a medium skillet heat extra virgin olive oil. Add bacon and cook until crisp. Allow to cool and then crumble into pieces.
4.Heat the maple syrup and salt in a small saucepot. Remove from heat when salt is completely dissolved.
5.To assemble place waffles on a plate, drizzle with salted maple syrup, and sprinkle bacon overtop.
Yield: 4 & 1/4 cups
Ingredients for Alex's whole grain gluten-free flour:
2 cups brown rice flour
1 cup plus 2 tablespoons almond flour
1/2 cup plus 2 tbsp sweet rice flour
1/2 cup plus 2 tbsp potato starch
Directions:
1.Combine ingredients together. Store in an airtight container.
Makes: 1 cocktail
Ingredients for Spicy Grapefruit and Sweet Basil Margarita:
1 basil leaf
1/4 tsp jalapeno, seeded and finely diced
1/2 grapefruit, juiced (about 2 ounces)
2 ounces silver tequila
1 tsp agave
Ice
1 splash seltzer
Directions:
1. In a glass muddle basil and jalapeno until flavors combine. Add grapefruit juice, tequila and agave and stir to combine. Fill glass with ice and top cocktail with seltzer. Garnish with a piece of grapefruit.
Makes 1 cocktail
