1. Start by preparing a roux. Melt down the butter in a pan and whisk until the butter forms a smooth foam.
2. Drop in the flour and whisk through until the mixture forms a dark blonde paste.
3. Stir through the milk adding it 1/2 a cup at a time and continuing to whisk the mixture until it forms a creamy glossy consistency.
4. Season with the nutmeg and salt.
