1. Pre-heat a frying pan and pour in 2 olive oil.
2. Into this, place 2 cups (300g) of grated carrot.
3. Cook until the carrot dulls slightly (approx.15 mins, stirring all the time).
4. Remove from the heat and cool completely.
5. Once cool, stir in ½ cup (100g) of natural yogurt, 1 chopped clove of garlic, sea salt and ground white pepper and a handful of chopped flat-leaf parsley.
