This classic Vietnamese prawn dish is quick and incredibly easy to make. A wonderful marinate of garlic, sugar, and shallots flavors the prawns, which are then tossed in a delicious tomato based sauce, which is then finished with some crunchy scallions, absolutely perfect for any occasion! Cooking Recipe

Ingredients:
8 king prawns, remove pointed part of head, shells pealed, and vain removed
2 tbsp garlic, minced
2 tbsp red shallots
2 tbsp sugar
2 tbsp fish sauce
Pepper to taste
4 tbsp vegetable oil
½ tbsp tomato paste
6 tbsp water
½ tsp oyster sauce
4 scallions

Directions:
1. Start by marinating the prawns with ½ tbsp of the minced garlic, ½ tbsp of the red shallots, 1 tsp of sugar, ½ tbsp of the fish sauce, and some pepper, and allow the prawns to marinate for 10 minutes.

2. To a hot wok, add the oil, 2 tsp of garlic, the red shallots, and then briefly sear the prawns on each side for about 30 seconds. Once they have turned pink, remove the prawns from the heat and set them to one side. Take care not to overcook the prawns, as they will have to be returned to the pan to be heated further.

3. Mix together the tomato paste, the water, and ½ tbsp of oyster sauce, and add it into the hot wok and simmer briefly, adding more of any of the ingredients as required.

4. Finally, return the prawns to the pan, add 1 tbsp of sugar, 1 tbsp of fish sauce, and the scallions, and cook until the prawns are warm through, and serve immediately.
