Grilled Halibut With Nectarine Salsa

We only have a little time left with this summer's nectarines, so I'm using them as much as possible. This super simple combination is sweet, tangy & fresh and brightens up the mildness of the halibut. This salsa would also be really delicious with chopped mint if you aren't a cilantro lover. It would also pair nicely with any grilled fish - salmon in particular - or chicken.

Cooking Recipe

Servings 4
Prep Time: 5 minutes
Cook Time: 15 minutes
Ready In: 20 minutes

Ingredients:
2 nectarines, diced
½ cup red onion, diced
½ cup cilantro, roughly chopped
Juice of one lime
4, 6-ounce halibut fillets, center cut (about one inch think), skin removed

Directions:
1. Preheat grill to medium-high heat.

2. Mix together nectarines, red onion, cilantro and lime juice.

3. Season halibut fillets with olive oil, kosher salt & pepper. Place fillets on hot, oiled grill and cook for approximately 4 minutes, or until halibut releases easily from the grill. Flip and cook about 2-3 more minutes € until just cooked through.

4. Top fish with nectarine salsa and enjoy!!
