2 nectarines, diced
½ cup red onion, diced
½ cup cilantro, roughly chopped
Juice of one lime
4, 6-ounce halibut fillets, center cut (about one inch think), skin removed
1. Preheat grill to medium-high heat.
2. Mix together nectarines, red onion, cilantro and lime juice.
3. Season halibut fillets with olive oil, kosher salt & pepper. Place fillets on hot, oiled grill and cook for approximately 4 minutes, or until halibut releases easily from the grill. Flip and cook about 2-3 more minutes until just cooked through.
4. Top fish with nectarine salsa and enjoy!!
