Lemon cured beef sirloin salad is absolutely perfect for a summer lunch. Quick and incredibly easy to make as it requires no cooking, but incredibly tasty and will impress all of your friends. Ingredients:
Lemon Cured Beef Sirloin:
½ cup cilantro (sawleaf), finely chopped
½ cup rice paddy herb, finely chopped
10½ oz (300g) sirloin beef, thinly sliced
2½ lemon, juiced
1½ tbsp fish sauce
4 tbsp roasted rice powered
½ red onion, sliced
½ cup crispy fried shallots
½ cup bean sprouts
2 tbsp sugar
salt to taste
peper to taste
4 tbsp roasted peanuts
chili to garnish

For the Dipping Fish Sauce:
3 tbsp fish sauce
3 tbsp rice vinegar
2 tbsp sugar
Dash of lime
½ clove garlic
1 whole red chili

Directions:
Lemon Cured Beef Sirloin
1. Add the lemon juice to the sirloin and mix thoroughly. The beef should begin to change color from a deep red to a pale pink and then squeeze out some of the excess lemon juice.

2. Add the fish sauce and roasted rice powder to the beef and make sure the beef is completely coated. To make the roasted rice powder, place dry jasmine rice in a hot pan, and toast until they turn light brown, be careful not to leave the rice in the pan too long as it will burn. Then in a pestle and mortar, grind the toasted rice into a fine powder.

3. Finally add in the rest of the ingredients: the culantro, the rice paddy herb, the red onion, half of the fried shallots, the bean sprouts, the sugar, and the salt and pepper. Make sure to mix thoroughly as each of the ingredients are added.

4. To serve, top with the roasted peanuts, the rest of the fried shallots, half a chopped chili and a little drizzle of the dipping fish sauce.

Dipping Fish Sauce
1. To make the dipping fish sauce, mix all the ingredients together, and serve alongside the salad.
