1 bottle prosecco
3 white peaches, peeled, de stoned and roughly chopped
2 tsp sugar
1. Place the peaches and 2 tsp sugar into a food processor and blend until smooth.
2. Set aside to chill.
3. Pour peach puree into chilled flute, gently add the sparkling wine. Stir gently.
4. Garnish with a sprig of mint.
